Smoked Paprika Corn Chowder
Prep time 10 mins Cook time 35-40 mins
Ingredients
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth (made with Folona bone broth powder)
- 2 cups fresh or frozen corn kernels
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1 cup milk (or dairy-free milk for a vegan option)
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
-
Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté until they become translucent and fragrant about 5 minutes.
-
Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally to prevent sticking.
-
In a separate bowl, dissolve the Folona bone broth powder in 4 cups of hot water to make the vegetable broth. Pour the broth into the pot with the potatoes and onions.
-
Add the corn kernels, diced red bell pepper, smoked paprika, dried thyme, and bay leaf to the pot. Stir well to combine.
-
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 15-20 minutes, or until the potatoes are tender.
-
Remove the bay leaf from the pot and discard it. Using an immersion blender or a countertop blender, blend about half of the chowder mixture until smooth. This will help thicken the soup while still leaving some texture.
-
Return the blended mixture back to the pot and stir in the milk. Season with salt and pepper to taste.
-
Simmer the chowder for an additional 5 minutes to allow the flavors to meld together. If the chowder seems too thick, you can add a little more vegetable broth or milk to adjust the consistency.
-
Serve the smoked paprika corn chowder hot, garnished with chopped fresh parsley. It pairs well with crusty bread or a side salad.
-
Enjoy your delicious smoked paprika corn chowder with Folona bone broth powder!
